1 Medium Onion, Finely Chopped
2 Cloves of Garlic, Peeled and CrushedStep 1. Place the red spilt lentils into a saucepan, remove the dried red chillies from the spice mix and add the remaining spices to the lentils.
Step 2. Add 750ml of cold water and bring to the boil.
Step 3. Reduce heat to low and simmer of 10 minutes stirring frequently.
Step 4. Cover the pan and simmer for a further 30 minutes, stirring occasionally.
Step 5. Meanwhile melt the butter in a separate pan and fry the onion, garlic and the dried red chillies until well browned. (The amount of chillies provided produces a medium hot dish but can be reduced if a milder dhal is preferred)
Step 6. When the dhal has began to thicken, add the fried onion mix to the dhal and stir to combine
Step 7. Continue to simmer until the desired thickness is reached (stir more frequently the thicker the dhal becomes to prevent it sticking / burning to the bottom of the pan). If the dhal over thickens just add a little water
